What’s on our plate? Chickpea and tomatoe soup with ditalini!
It was a back to school day for the grad student of the house, Kacie. That means another night of cooking for myself. No big deal, I can use the practice. I opened up The Quick-Fix Vegetarian in the Kindle and got to it. It took very little prep time, requiring the knife only once to chop an onion. The recipe called for ditalini but any small pasta will do the trick so I chose the tiny stars. With prep and cook time it took less than 30 minutes from start to finish. This is a nice hardy soup that should keep you full for a while.
What’s on our plate? Mediterranean Orzo Salad!
With my lovely wife, Kacie, staying late at work for her fantasy football draft it was up to me to cook dinner tonight. I went with the Mediterranean Orzo Salad from one of our favorite recipe books, Quick-Fix Vegetarian. This one was moderately quick, coming in at about 30 minutes from start to finish. It doesn’t take a lot of skill and it tastes great. The mustard and white wine vinegar dressing works very well. Putting it on crisp lettuce and finishing it with toasted pine nuts makes for a great vegetarian meal.

When you’re ready to create your list simply tap the orange star in the search bar to add the items to your list! It’s that easy.

McDougall’s Banana Muffins
Another recipe from Dr. McDougall, these muffins are a great use for old bananas and a snap to make. The recipe is good, but a bit short on flavor. Next time I’ll be adding nuts to jazz it up a bit.
